Very easy, very adept. I seared this equally directed then put it in the crock pot and let information technology cook for 7 hours. Used 2 cans of vegetable broth and 1 lb. bag of infant carrots and 2 lbs of tiny new potatoes. Highly recommend.

This is a very adept base recipe. I crusted the pork with seasoning salt (Hye's is astonishing if you can get it), celery salt, pepper, onion and garlic pulverization, and a scrap of poultry seasoning. I so added some olive oil to a pan and seared the roast on sides and ends. And then I put bay leaf in my roasting pan and prepare the pork on superlative of that. Topped it with onion and put onions and celery in the pan, then added chicken goop. Covered with foil and roasted at 300. Kept the mushrooms whole and added baby carrots at the end. The broth is then adept information technology makes a lovely gravy or base of operations for pork noodles the adjacent day (shred the pork and serve buffet way with soy sauce, noodles, thin sliced celery and light-green onion and add together a chip of the heated broth.

Absolutely delicious! Tender and juicy. I used a three three/4# roast and rubbed it with Montreal Steak Seasoning rather than the salt, pepper, and garlic powder. I did employ the onions, but no other vegetables. As well, I used 3 1/2c. of craven broth along with 1c. of water. Roast was cooked perfectly in ii 1/ii hrs.
09/26/2005
Made this for some friends and was told this is 1 of the all-time roasts they have ever had. I only had a 3 lb roast, so I cut all the ingredients in half and cut an hour off the cook time. Turned out perfect.
09/29/2011
I did a variation of this and it turned out great! I used a 3 lb pork butt (a little over is fine likewise). I mixed i Tbsp each of garlic salt, pepper, onion pulverisation, seasoned common salt and poultry seasoning. I rubbed it into the meat then seared it lightly on all sides. Added 3 1/2 cups of chicken broth to the roasting pan and covered it tightly with foil and baked at 350 degrees for i 60 minutes. I so turned the oven downwards to 300 degrees and cooked another hour. I then added onions, carrots and baby cherry potatoes and cooked some other 45 minutes. Very tender and tasty.

The recipe's ingredients looked banal to me, merely afterward reading all the positive reviews, I thought I'd give it a try. I found it very tasteless.
06/22/2006
i did most everything in the, except i stuck it into a oven handbag. Such a yummy roast
10/11/2002
Then moist and tender -- the meat but fell apart! I'm going to add BBQ sauce to the leftovers to make pulled pork sandwiches. My but suggestion would exist to add more seasoning for greater flavor -- perhaps stud with garlic or fennel seeds and salt generously.
01/03/2006
This was wonderful!! The meat was so tender that you didn't need a knife at all. Information technology takes a while, but it is soooo worth it!! I'll definately exist making this once again!
11/xvi/2008
It was great! I browned my 6.5 lb butt in olive oil, and hand rubbed it with a dry seasoning mix. I sliced it deep nether the fat layer and rubbed some in there too. I surrounded it with potatoes, onions, carrots, celery, i" to two" of water, and covered it tightly with foil. I baked information technology at 350 for three hrs, and so uncovered for xxx min more. It was then delicious!
01/20/2010
I recall the recipe should state to flavor GENEROUSLY with S & P -- this is a very important step when searing meat. Simply sprinkling a little S & P will do nothing for the flavour of the meat. You need a skilful caramelized crust for optimum colour and flavour, which tin can only be achieved by a generous dose of South & P...the more, the ameliorate! With this cut of meat, it's pretty hard to go incorrect.

This recipe is fantastic. My cooking skills rate somewhere beneath beginner and I am usually disappointed with the results of my cooking efforts but I am a bachelor and I dont think I can eat another microwave dinner so I go on trying. This recipe turned out groovy and it was also very easy to exercise. I would rate this a 5+++++++stars

This is Awesome. It takes a fairly cheap cutting of meat and turns information technology into a mouth-watering meal. I replaced the mushrooms with fennel and added the fennel at the beginning with the onions. I also cutting 5 cloves of garlin in half and inserted them into the roast in various places earlier I even browned the meat. YUMMY! This fed v hungry adults with plenty left over to make 3 hearty servings of pork & noodles as "leftovers" another dark.

I made this a few nights agone, and my married man is still talking almost it! My roast was still a little frozen when I started, and then I was worried, but it turned out fantastic! I did everything as it said, but but filled my roasting pan about i/iv to 1/3 full, as the juices from the meat filled information technology more. And I didn't utilise nearly as many veggies.. merely what I thought we would demand. Plus my roasting pan isn't big enough for that many. Oh, and instead of common salt, I used Tony Cacheres seasoning, plus the pepper and garlic pulverisation to rub on it before browning. I put some olive oil in the skillet before I browned, likewise. I'thousand sure it was supposed to be part of the recipe, but was forgotten. Anyway, this recipe is highly recommended!!! :-)

Fantastic recipe because it'southward piece of cake, tasty, and comes out overnice enough to prove off. This was my beginning fourth dimension making a pork roast. I did a iii lb, no bone roast. I thought I put as well much seasoning but in hindsight More than seasoning is meliorate as other reviewers have mentioned. Keep using the thermometer then information technology doesn't get overcooked - mine cooked in essentially less than 3 hours at 350 degrees.
04/04/2005
Delicious! The simply thing I'll do unlike next time is to fill the pan less than 2/iii full with water, used large dutch over and afterward filling it 2/iii full with water and covering it the juices would have spilled out of the pan if I hadn't removed some earlier adding the vegetables(recollect the pan is covered and the steam creates more liquid). Wouldn't modify whatever affair else, used water only , no broths. After removing the veggies and meat from the pan boiled juices downwardly to nearly !/2 to concentrate them and fabricated a succulent gravy. It was great the next twenty-four hours besides and I froze the left over gravy to have with pork tenderloin or baked pork chops since in that location'due south never enough juice from them to make gravy.Cheers Kmitschke.
01/14/2011
This recipe looked good and uncomplicated to brand but i wanted to use it in a crock pot. I had a smaller roast of 3 lbs and then i recalculated the amount of all the items. I fabricated it just like the recipe stated except i also rubbed in oregano with the salt, pepper and garlic and put it up almost 9 am in the crock pot. Had dinner about 6pm and it was such a delicious meal! i shredded the pork with 2 forks in that location was so much food. My husband and i were so full but could not finish eating. This is really good and so easy to make.
02/12/2010
I take fabricated this roast four times in the Crockpot and each time it came out very juicy and flavorful. I add a few actress spices (garlic salt, bay leaves, thyme, etc.) and cook the roast on depression until information technology reaches the desired temperature. I as well include carrots, onions, quartered potatoes, and a cup of beef goop in the pot with the roast. This is a very good basic recipe and I have been complimented on information technology many times.
03/05/2008
This recipe was so moist...I couldn't believe it. I did apply other review tips to make it. I used beef bullion instead of plain water and added water to half the roast. I used sea salt, garlic powder, pepper and added rosemary and thyme to the rub likewise as inserting a couple of pieces of garlic. I did sit down it on some bay leaves. It was the all-time pork roast I ever made. I will be using this recipe again. Thank you lot for this recipe.
09/21/2005
This was delicious. I served the pork with scalloped potatoes so I just cooked the pork with onions, no potatoes or vegetables. The timing was perfect and the meat was super moist and tender and it sliced beautifully.I slathered the sliced pork in BBQ sauce everybody loved it.The pork made fantastic sandwiches as well. Cheers.
04/xix/2004
I similar to put the pork directly in a baking pan surrounded by onions, carrots and potatoes drizzle with plenty of vegetable oil add salt, pepper and garlic pulverization. Cover with tin foil and bake about two - 3 hrs depending on size of meat.
01/03/2003
Nifty! I took all the drippings, skimmed the fat (in my gravy separator)and fabricated a simple gravy with only the meat juices and Wondra Flour. This recipe is good enough for company.
01/17/2007
I cooked it just every bit it said but substituted some veggies. Succulent!
11/12/2005
Past far the most surprisingly delicious and piece of cake recipe I've found to date. I've made this several times and each fourth dimension it comes out wonderful. A perfect autumn atmospheric condition dish. I merely follow the recipe exactly--oasis't tried it with the broth however, simply I may. Leftovers (when at that place are any) I mix with BBQ sauce for really tender and tasty BBQ pork sandwiches. This sure beats the 'same quondam same old' for dinner.
09/05/2006
Moist & delicious! The absolute best!!
03/xvi/2004
I made this for supper concluding dark, but added beef broth, and chicken broth. Cooked it at 350 for near 2 1/2 hours covered, (turned it over half way), and so added the vegies. Sprinkled some rosemary over the veggies, and left it for another i i/2. WOW!!!! This was very good.
07/01/2002
This was actually good. We (a family of 8) enjoyed it and anybody came back for seconds. Thanks.
12/31/2008
Awesome! Easy, simple, and admittedly delicious. Married man raved almost it.
08/sixteen/2004
My family unit said, "This is one of the best meals you have e'er prepared!" I wasn't quite sure how to accept that since I commonly put a lot more effort into putting on a meal......I am not generally a melt that thinks easy is better. Just this recipe is piece of cake and succulent! I served the roast and veggies with honey mustard and a side of mesomorphic applesauce, for a Sunday dinner. Perfect! Simply one suggestion: Whenever I prepare any cut of pork I ALWAYS utilise Jane's Crazy Mixed Upwards Salt in place of regular salt.........it makes any pork dish sublime, including this ane!
11/15/2004
I used i tin of beef broth and i tin can of vegetable broth instead of the h2o called for in the recipe, and ended upward adding some water about halfway through cooking. Only I ended up with a fairly good base for gravy, which I fabricated by heating it to a boil and adding a slurry of cornstarch and h2o. The veggies were perfectly cooked, and the roast was tender and good. I might've similar a little bit more spices on the roast, but other than that information technology was corking. I served it to company along with the "Unbelievable Rolls" from this site, and a salad. I didn't use any mushrooms, and used less onion than chosen for.
01/09/2012
Cooked this for dinner concluding nighttime and it was crawly. I seasoned it with Cajun all purpose and it was fine. I might mess with the seasonings, but the roast and everything in information technology was delicious. I couldn't detect a pork butt roast so I used boneless pork loin nearly the aforementioned weight. Highley recomend and will cook again.
09/24/2011
. Very yummy with a few modest changes. I added about i/4 c. chopped celery and some worcestershire sauce. Also, I cut the recipe in one-half then I could use my slow cooker. I made a gravy from the juices before serving and information technology was very tasty!
10/13/2003
This was a winner in our house. The pork turned out very tender. I added Bavarian Spice to the mixture of salt, pepper and garlic powder before searing it and it added a lot of flavor. I substituted beef broth for the water which also added season. I cut 5 russett potatoes into quarters since I didn't have new potatoes and they turned out perfectly. For gravy, I mixed flour with some of the liquid after it cooked. Overall, a very good meal.
eleven/eleven/2011
This came out so tender and delicious! Definitely a keeper and will make again! Thank you lot for sharing!
11/08/2004
Very good. Extremely tender. Very tasty. Left out the mushrooms because my husband hates them. Also seasoned the roast with Montreal Steak seasoning before searing information technology. I merely used a 3lb. roast so cooked it about an hour less than recommended and used one-half the other ingredients and it turned out perfect.
10/15/2007
This was corking and simple. I fabricated about a 3 lb roast with 4 potatoes, 1 onion and 5 carrots. I used 2 chicken boullion cubes with a couple cups of h2o. I sprinkled the vegetables with my home made steak seasoning for an extra season considering we eat strong flavorful food - as others recommended to add together a chip more herbs. It turned out very tastey and everyone ate it upward! Thanks.
05/12/2003
This was amazing! I find that if you crank the oven to nearly 475 F and encompass with foil for 15 minutes you lot get the same results as yous would browning the roast. Just remember to plough it back down after. I covered the roast with fresh garlic instead of the powder. Also, I brushed the veggies with just a bit of vegetable oil and sprinkled them with fresh rosemary.
09/09/2003
My husband is a large fan of dark meat of chicken and pork, and so this was right up his alley! I did as "nightwish5150" did and used broth (vegetable) with a little water (as needed) and then fabricated a really tasty gravy out of that. I also stuck this in my crock pot afterwards searing information technology (86 degrees & veeeerrry humid = no oven for me)! Very juicy and tasty, cheers kmitschke!
03/23/2004
a picayune tasteless; although i did modify information technology go far in a crock pot.
01/15/2002
Very moist and tender meat but it lacked a niggling flavor. I think next time I'll add together more seasoning to the roast before I sear it.
08/30/2006
Cheers then much! dad rec'd high fives from 3 picky eaters on this one. Used quartered taters and this was a hit. I'll be proud to put this on the table for visitor. Might even enter it into the annual family unit cooking contest in Nov. thanks.
01/15/2007
Very juicy and tender meat! I also added half goop and half water to pot instead of all water. For left overs I made a pork stew, very yummy! Thanks for the recipe!
07/06/2014
My smoker gave out on July 3rd. I had a spareribs meal and Boston Barrel meal planned for the weekend with out of boondocks guests. Turned my Weber Grill into a smoker for the ribs and they turned out bang-up. Boston Butt is a different trouble because Butt must exist cooked low and deadening. The Barrel had already been prepped with mustard and Mike Miles rub for 36 hours. I put carrots and celery in the lesser of my French Oven with 2 i/2 cups of chicken goop, topped with onion slices. I scored the fat cap and inserted garlic slivers into the cuts. Baked fat side up @ 200 degrees for 8 plus hours and temp reached close to the 200 degree mark I was looking for. I removed from the oven, wrapped tight with tin foil and put into an ice chest and covered the roast with bathroom towels for ii to two one/2 more hours. Wow, what a great piece of pork!!! The time in the ice breast is essential because this is where the breakdown of this cheap cut of meat actually gets tender. If you plan ahead, this is really an easy recipe. My family unit and friends idea I was a miracle worker this weekend. I didn't have the heart to tell them I just got lucky and a little research on the internet. My roast was five 1/2 lbs.
12/19/2004
My family loved this recipe and information technology was very easy to do. The roast was tender and juicy. I substituted quartered blistering potatoes for new potatoes and added celery. A definite keeper.
11/30/2008
Excellent! Fabricated pork tacos and tamales the next day with the leftovers.
03/27/2011
Perfect! The just major modification I made was to use white wine for some of the water. Made gravy with the juice and served with pasta because I had no potatoes. Anybody raved.
eleven/eighteen/2009
Great 1 dish meal-I used a 3 1/2 pound pork loin roast (I notice that to exist nice and tender) and halved the cooking fourth dimension. Delicious and like shooting fish in a barrel.
03/24/2003
A definite WINNER! Piece of cake AND YUMMY! My husband and friends enjoyed this recipe so much I'g going back to the supermarket to buy some other port butt roast (and and so is my friend). The only change was I used portabella mushrooms but because I like the flavour of them.
11/28/2001
This was easy and tender, only rather bland. I added extra garlic and fresh parsley.
10/09/2011
This is a terrific recipe, the meat practically vicious apart while I was slicing information technology since it was so tender. It had great season and the house smelled delicious. I did skip the mushrooms and made mashed potatoes instead. Just watch out for an overly fatty piece of pork. This is a real crowd pleaser.
08/24/2003
It just so happened I had all the ingredients on manus to give this a whirl. I filled my baking pot to ii/3 as instructed only used both water and beef goop. I likewise substituted 3 cloves of minced garlic instead of the pulverisation. When the time came to add the mushrooms I took out about ii cups of the goop and prepared an easy gravy using just flour. The meat so tender and the vegetables were perfect! This has been added to my recipe box!
07/12/2018
This is an easy recipe and turned out actually adept. I followed the directions except I threw in beef broth (instead of water) considering I had an opened container in the fridge. The only other thing I did differently was to utilise the slow cooker instead of the oven. Information technology was a delicious meal!
ten/17/2004

10/03/2011
Great!
09/15/2013
Cooked this for the offset time e'er....my 8 twelvemonth said information technology was delish! That's a BIG plus for me. Will be making this once again! Added my own seasoning, sceared the meat first(never washed that before) and permit it roast all night at 190 degrees in the oven....LOVELY, the meat just cruel apart!
12/21/2005
This was overnice home cooking. I added thyme and rosemary, and used a lot of the liquid to make gravy. I also used goop like other reviewers.
11/01/2004
This was splendid. My family unit loved it. I did what others said and used beef goop in place of water. I will be making this oftentimes, particularly when I take company I desire to impress. OOH LA LA!!!

x/28/2003
Non much to say except DANG!!! I couldn't even use a knife on this roast considering it simply SLID through the meat. I had to peel it with a fork after cooking information technology was soooo tender and moist. Followed recipe to a T. Did Not, however, add potatoes equally I am watching my carbs. Substituded more carrots and portabella mushrooms for potatoes. Yummy!!!!!
02/12/2005
Great recipe. Used ii cans of beefiness broth plus water. My family loved this recipe. The roast was incredibly tender. If you want more than a couple of cups of liquid for gravy you should probably add additional water.
12/31/2006
this was really good! i did add a lot of garlic and celery with the onions. my husband doesn't like mushrooms so i omitted them altogether. i am not a slap-up fan of gravy so i did non fifty-fifty bother to reduce the liquids to make it. this is definitely a keeper.
03/twenty/2011
Not bad!!!! All thumbs upwards....started at noon at 325*....increased to 350* at 3:30, put in baby carrots & small 'tatoes....gravy served over all...adjacent time go out out mushrooms...
09/23/2012
This was my get-go fourth dimension roasting a pork butt (very affordable) so I followed the recipe; the merely tweak that I fabricated was substituting vegetable stock for the water, as I had a lot of it and didn't have many uses for it. This turned out to exist i of the almost scrumptious dishes that always came out of our oven, oh, human being information technology was tender, and I don't think I have to mention that the veggie stock made some killer gravy! 1000-thousand-m-m-one thousand! Thanks for this recipe, a definite keeper.
08/31/2013
I have to give this ane 5 stars - I prepared it merely as the recipe states and definitely hit an A+ domicile run. My husband raved about how moist and tasty it was and I fifty-fifty emailed the recipe to my bachelor son. This one's a keeper.
04/25/2012
I made this tonight and it was fantastic! I was so surprised at how much flavor it had because it is so piece of cake! I followed the recipe exactly except that I added a few sprigs of fresh rosemary and a bay leaf before I put information technology in the oven. The pork does literally melt in your oral cavity! Delicious and has so many possibilities for left-overs!
12/29/2013
Succulent. Didn't alter a thing. Will definitely make once more.
03/07/2012
This recipe is wonderful. So easy and the meat came out incredibly tender. The merely change I fabricated was to add a tin of chicken goop with some water. Cooked information technology covered at 300. The meat just barbarous apart. I volition be fixing this once again.
11/23/2003
The meat was juicy and literally was falling off of the bone. I used minced garlic instead of garlic powder and used half vegetable broth, one-half water instead. It was a family favorite!!!
12/23/2004
Later on 4 hours of cooking, my vii lb roast was overdone. I'll endeavor it again and this fourth dimension monitor the temperature more than closely. But the flavor was slap-up, and fifty-fifty overcooked it was still juicy.
03/05/2016
I didnt bother searing on the stove beginning, I made it the same fashion I make leg of lamb (i'yard Greek)...you stuff it with garlic cloves, cover in EVOO, add together spices. Put on rack at 400 with water in lesser of pan for 15 mins. When browned, add root veges (potato, onion and carrot) and wine. Reduce oestrus to 325-250..Embrace in foil, and remove everything to get to the wonderful drippings and place in saucepan. Put everything dorsum in oven and now add the mushrooms. Re-cover. At present take the drippings and add together to a roux made of butter and corn starch for a gravy. And a scrap more wine. Remove everything from over, place in serving dish, and comprehend in the gravy. YUM YUM.....making information technology again (dec 17 2022) going for a bit sweeter this time ....doing apple juice and brown saccharide with ginger, soy sauce, tons of garlic, S&P, worcestershire marinade...cooking at 300 then calculation veges and at the finish cranking it up to 475 for a chaff.
10/07/2014
Very good. I did not sear the roast. I simply put everything except the mushrooms in the crock pot with chicken broth instead of water. I cooked it for eight hours overnight, put it in the fridge, skimmed off the fat, added the mushrooms and then reheated again before dinner time. Sometimes I don't similar the texture of meat cooked in the crock pot, but I liked this. My husband really liked the result. I added a squirt or 2 of sriracha sauce to mine for a picayune boot.
04/21/2014
Made this successfully for Easter dinner. Used a pork loin instead of roast and beef stock with water instead of merely h2o. Covered and cooked for 3 hours; and then added carrots and potatoes and cooked uncovered for additional hour. Everything came out tender and delicious. Looking forrad to leftovers.
04/xx/2002
This is actually great if you are a pork roast fan. The vegetables had tons of flavor.
05/22/2001

12/07/2000
My family unit loved this recipe even my 3yr. old. The pork roast turned out very tender and literally pulled apart. Thank you lot for sharing this recipe.
07/10/2010
Cooked in my bandage iron dutch oven and it turned out incredibly tender. I would brown the meat in spices next fourth dimension. It had an almost gamey flavour I'd like to mask. I also never use garlic pulverization - slice garlic and piece meat to insert garlic. I tie all roast with kitchen string.
06/26/2010
fantastic I rubbed mine with cumin salt pepper and liquid smoke, then seared the meat before putting it in beef stock with onions, 4.5 hrs amend than resturant pulled pork.
09/23/2014
I don't know what I did wrong. This was chewy, tough, just bad. Had to make some gravy to brand it edible.
01/19/2009
Amazing. Nosotros loved this, and volition use the leftovers for soft tacos this night. I used a tin of french onion soup as my water in the pan, turned out nicely.
01/15/2013

12/14/2012
I used a pork loin roast for this meal, every bit that is what I had in the freezer. This was a wonderful dinner to fix on a cool Saturday. Brownish the meat, add veggies and put in the oven for iii hours. I did sub Brussels sprouts for the mushrooms, personal preference. The meat was so tender and the veggies were cooked just right, not the least bit mushy. I will near definitely use this recipe again when I have another roast or a pork butt. The leftovers were only a wonderful the next day. Thank you Kat for sharing.
12/25/2010
This was the easiest Christmas Eve dinner I have always made, and very little clean upwards. I am going to use the residue for shredded pork tacos.....thanks for the recipe!!!!
ten/08/2004
Had unplanned visitor (besides parents) and everyone LOVED this! What a tender and moist roast! Thank you for a wonderful recipe!
02/24/2004
This was an amazingly simple merely delicious recipe! I used three pork shoulder butts, trimmed. Instead of using water I poured 2 cans of beef broth over meat and 1 onion. I cooked the meat covered in a big casserole for 2 hours 45 minutes, so added cut carrots and Yukon gilt potatoes cutting upwards. I cooked this for 1 hour l5 minutes more. Tender, tender, tender. Thanks then much.
01/05/2011
We fabricated this on New Year'south Day and it was a huge success. I cooked it in a mixture of beef and chicken broth instread of water and the grazy we made was wonderful and full of flavor. Searing is must!
07/09/2017
Piece of cake & succulent. I will say still the recipe appeared to be rather banal so I followed "Suzy's" spices: "I crusted the pork with seasoning common salt, celery common salt, pepper, onion and garlic powder, and a bit of poultry seasoning." I then added some olive oil to a pan and seared the roast on sides and ends. So I put bay leaf & some rings of onion in my roasting pan and set the pork on pinnacle of that. Then topped information technology with remaining onion and so added chicken goop instead of h2o. Covered and roasted at 300 according to directions. Added carrots and potatoes following recipe. Leftovers are yummo...
11/09/2018
Very expert recipe. I did make a few changes. I browned the roast, placed it in a 9x13 baking pan with a cup of water. I added the vegetables and covered it with aluminum foil. I put it in the oven for iii hours. While the roast was resting, I made gravy with the drippings. It was a hit! Will definitely be making it once more
ten/nineteen/2001

12/16/2010
Awesome recipe, I stripped the pork downwardly, making information technology pulled pork and added BBQ sauce to the meat. Served with on toasted breadstuff with mayo, cheese and onions. The family loved it!
01/19/2014
Delicious and like shooting fish in a barrel meal that volition be added to my Sunday dinner rotation. My roast was small - 2 1/two lbs - so my cooking time was cut down to a total of two hrs. It was just the ii of us, but it would have hands fed 4-5 people. I did not change much because the base recipe is pretty good on its own. I cooked the roast in a dutch oven and used i quart craven broth instead of water with a couple bay leaves added for flavor. I added a small bag of baby dutch potatoes subsequently 90 minutes and the terminal result was two very satisfied people. Cheers for sharing this recipe!

Awesome dish. I tweaked it a piddling by using 100% chicken stock and cooking information technology at 350 for the beginning hr and dropping it down to 300 for the final two hours. 3 hours total for a three.5lb roast. I also basted information technology every hr or so. The stock evaporates just leaves enough for a prissy gravy. Make a roux and spoon out some of the stock into the pan, thickens up nicely.
